How to Enjoy Our Peppers

There are many ways to cook and enjoy our sweet peppers!

Vegetarian treat: Steam cored peppers for five minutes, then stuff them with your favourite rice salad or grain pilaf. Bake in a 350˚F oven for 20 minutes or until soft and hot.
Spicy dish: Saute chopped peppers with celery and onions. Then combine with chicken, seafood or tofu to make a spicy Louisiana Creole dish.
Flavourful soup: Puree roasted and peeled peppers with sautéed onions and zucchini to make a healthy and delicious soup. Serve hot and cold!
Veggie tray: Bell peppers are one of the best vegetables to use in a veggie tray. They are bright in colour and hold up well when scooping tasty dips.

 

BBQ Peppers are delicious!

  • 2 large red bell peppers, quartered
  • 2 large orange or yellow bell peppers, quartered

Oil and Mustard Mixture:

  • 4 TBSP olive oil
  • 4 TBSP red wine vinegar
  • 1 TBSP Dijon mustard
  • 2 TBSP red onion, finely minced
  • 4 garlic cloves, finely minced
  • Salt / Pepper
Preparation:
  • Preheat grills. Mix together Oil and Mustard Mixture. Prepare peppers.
  • Place bell peppers on the grill and brush with the Oil Mixture.
  • Grill on a BBQ for 5 minutes until lightly browned. Turn them and repeat.
  • Peppers should be slightly soft. Serve hot or cold. Delicious!
